The two big ones with 1000+ pages are "Refrigeration and Air Conditioning Technology" and "Modern Refrigeration and Air Conditioning".
Without question I would say Refrigeration and Air Conditioning Technology 7th Edition is fantastic. It covers quite a bit in commercial refrigeration and gives very well detailed pictures and written formula's diagrams, etc... I believe it's the easiest to learn from.
I tried reading the pdf version of modern refrigeration and air conditioning and really don't care for it. A lot of it is very heavy on math formula's and equations. It gets really boring reading it and having so much math thrown in your face. I was always good at math, but I just don't care to see so much it for no good reason. The pictures and diagrams are very outdated and don't even come close to what you find in the other book.
There are other smaller books out there more specific to certain things, but the first book is the best.
I can attest to the above comments. I have both textbooks (Trade school used Modern Refrigeration when I first signed on but had switched to Refrigeration and Air Conditioning Technology when I got there). R/AC Tech. is a very informative book. I have the 7th edition. It explains things pretty clearly.
If you can get your hands on the Apprenticeship Training Standards book for Refrigeration and Air Conditioning Systems Mechanic (pretty sure you can download it from the MTCU site) that might help too. I have been told many, many times that the exam is based off of the requirements in that book.
