Title: Snow covered heat exchanger during the night.

And now it doesn't run. Winter here and we still have heat with the system. I found that I have two breakers marked "furnace" and one marked "AC". The AC breaker was tripped, when I reset it the exchanger (outside) created a large cloud of steam... and then nothing. (defrost cycle?)

Thermostat still works and keeping the proper temp in the house. I shut off and back on all the circuit breakers (2 furnace and 1 AC). Checked with multimeter that the big fuses in the outside box still have continuity. Can't find any reset switch.

The system is two years old. Carrier model num. 25HCC542A

I do not object to calling a tech, though I am more capable with mechanical, electrical, and plumbing than the average person.

So you have a 3.5 ton carrier heat pump. You should also provide the model of the indoor furnace and even what kind of thermostat you have. It sounds like something may have went wrong to cause the breaker to trip. It's very likely you once had only an AC unit outside and then it has been upgraded to a heat pump. Which would explain the marking on the panel as saying a/c instead of heat pump.
When the unit made this steam, did the breaker stay on? or did it trip again? Was there any noise of a humming of a compressor that came on at all?

Carrier furnace Mod Num FV4CNB005 also only 2 years old, as is the entire house is only 2 years old. The breakers were marked that way as a brand new installation.

Breaker stayed on and has not tripped since the once. Fan in the heat exchanger has not moved either.

The thermostat is a Honeywell (can't find a model num) it is Wi-Fi capable but have never used that option.

Does the outdoor board have LED error codes?  What is the outdoor temp?  Maybe there is a cut off temp and when it's too cold the heat pump won't run.

No outdoor board with LED. Outdoors has been low 30s at night and low 40d during the day (1.1 -1.4 C) which is not outside of operable range. No error codes, etc. in any of the thermostat menus.

Was running fine until the snow piled up blocking the airflow from the fan. When I realized and cleared the snow the fan never ran again.
