Hi guys,

I have absolutely no idea how HVAC / exhaust works....I am hoping someone has a manual or guide of some sort that can explain this; particularly with commercial properties / restaurants.

You need to be more specific...

Look for the appliance rating plate for the model and serial number, which could help track down an instruction manual.  It will also tell us the gas input rate.

You can also buy the gas code book B149.1-05 from CSA.  Read Annex C or Section 8 for codes pertaining to venting.

If you're working on a commercial property, you're better off letting someone with a license do the work.  You could assume alot of liability should something go wrong.

Hi there,

Sorry - I'm not looking to do any of the work myself, I'm just looking for knowledge. I am actually involved in commercial real estate and it's important to be able to answer questions pertaining to HVAC / kitchen exhaust etc.
